Just one of those days...
Do you ever have those days when everything seems hard? That was me, this last Saturday, it was kinda rough. I only got 6 hours of sleep because addie woke up in the middle of the night with a leaking diaper, after changing the sheets and putting baby back down it took awhile for me to fall asleep. Anyways, I felt like a zoombie all day, not really motivated, so I handed the baby off to Peter to take care of her for most of the day. By 5:30 I did not feel like making dinner but I hadn't done anything productive so I wanted to accomplish something, anything! I cracked open my Better Homes and Gardens Cookbook and voila! This recipe jumped out of the book and said "pick me, pick me!" So of course I did and it turned out fabulous! Definitely a keeper and sooo easy. I thought I would share it since it was so delish.
Two-Bean Tamale Pie
1 Cup chopped green sweet pepper (didn't have this so i did diced tomatoes instead)
1/2 chopped onion
2 cloves garlic, minced
1 tbsp. cooking oil
1 can kidney beans (rinsed and drained)
1 can pinto beans (rinsed and drained)
Editors Note: I added 1 can of corn
1 6 ounce can of vegetable juice (embarrassing but i have never used this or heard of it so i figured the tomatoes and juice would take it's place)
I small can diced green chile peppers
1 tsp chili powder
1/2 tsp ground cumin
1 8.5 ounce package corn muffin mix
1/2 cup shredded cheese
handful of cilantro
1. Grease a 2-guart square or rectangle baking dish. In a medium skillet cook sweet pepper, onion, and garlic in hot oil until tender. Stir in kidney beans, pinto beans, vegetable juice (or diced tomatoes and/or corn), chile peppers, chili powder, and cumin. heat through. Spoon bean mixture into prepared dish.
2. Prepare corn muffin mix according to package directions, add cheese and cilantro, stirring just until combined. Spoon cornbread mixture evenly in a 400 degree oven about 20-25 minutes or until golden. If desired, serve with salsa and sour cream.
Enjoy!

California Baby Sunblock
Favorite Things Friday brings us to California Baby Sunblock. My baby was only 4 months old when we took her swimming for the first time and 5 months old on her first days on the lake and trips to Hawaii and come to find out...WHAT? You're not supposed to put sunscreen on a baby younger than 6 months?? So I did my research and decided on this little number. You can get it at amazon and target. Although this little 2.9 oz bottle is a little pricey--through my own research--I came to the conclusion that it is the best sunscreen for sensitive baby skin. I only use this when baby is getting in the water because it is ULTRA waterproof, like it was hard to scrub off sometimes in the bath. So if your little munchkins are in and out of the water like crazy this might be the stuff for you!

The End of Water Days
Almost every weekend this summer we have been out on our boat. It is a sad sad day when you start shivering in the water, and don't want to fall because you have to get back in the water. Week by week Utah Lake's temperature is dropping and I am so sad to bring summer to an end. I took this picture out on the lake on Saturday because I love it when the sailboats come out, there is something so timeless about them.
On a happier note fall is here! And I will welcome it with my annual peach buying, carmel appleing, and canyon trip goodness!

BĂ©aba Stackable Formula & Snack Containers
When the baby cries, when the toy fails (sing to tune of sound of music) when I'm feeling sad, I simply remember my favorite things... Okay for reals, this is one of my favorite gifts that I received from a friend when I had my baby. These Stackable Formula things are a Lifesaver! I just pre-measure out the formula I will need for each bottle and bring bottles filled with water and I am good to go for almost a whole days food. Great for traveling, church, boating, or even middle of the night feedings. My baby is starting to eat puffs and snacks so soon I will start putting little snacks in there also. How to Build a Bookshelf Part 2
Next comes my favorite part. The wood putty, wood putty is like a band-aid...it makes everything better. Without the wood putty the molding in the corners did not match up at all. So here we go...
- Put wood putty on all corners of molding and holes where the finishing nails are. Let Dry.
- Sand wood putty down so that it matches the curves and looks like a corner.
- Measure out the distances you want your shelves to be (the heights) than measure how long each shelf should be in its SPECIFIC spot *This is where we ran into a problem we measured the width in only the middle of the column and used that as our length, then when we went to put them in realized our bookshelf got skinny towards the top (yes the poor girl is bottom heavy) so we had to saw down the edges which was a pain, just ask my husband.
- Go to home depot or your hardware store of choice (home depot will cut everything for you, lowes...not so much) and have your mdf shelves cut to your specifications.
- This is where i put beadboard wall paper on the sides to make it pretty, you could do that to the back OR a cute wallpaper would look pretty peaking behind your books. I suggest Graham and Brown wallpaper, Martha Stewart's is the same price but thinner!
- Paint everything. The back boards, the molding the shelves EVERYTHING.
- Drill holes where you want the shelves to be. I did 2 on each side.
- insert metal shelf holders.
- Insert shelves
- Fill up with books and pretty things!
